SUMMER CHICKPEA SALAD

  • Chickpeas – 1 standard tin, drained

  • Red onion, small, chopped fine

  • Tomatoes, 4 medium or 6-8 cherry, chopped in bitesized chunks

  • Red chilli, half, deseeded chopped fine

  • Mint, fresh, chopped fine, small handful

  • Basil, fresh, chopped fine, small handful

  • Feta, 100g crumbled or small squares

  • Sea salt to taste

  • Black pepper to taste

  • Extra virgin olive oil, enough to coat 2-3 tablespoons roughly

  • Lemon juice, freshly squeezed to taste – ½ - 1½ lemons

 

Mix it all up in bowl!
