SUMMER CHICKPEA SALAD
Chickpeas – 1 standard tin, drained
Red onion, small, chopped fine
Tomatoes, 4 medium or 6-8 cherry, chopped in bitesized chunks
Red chilli, half, deseeded chopped fine
Mint, fresh, chopped fine, small handful
Basil, fresh, chopped fine, small handful
Feta, 100g crumbled or small squares
Sea salt to taste
Black pepper to taste
Extra virgin olive oil, enough to coat 2-3 tablespoons roughly
Lemon juice, freshly squeezed to taste – ½ - 1½ lemons
Mix it all up in bowl!
