Mushroom slices

  • 4tbs olive oil

  • 250g  - 8 medium mushrooms chopped

  • 8 eggs

  • Bunch spring onions

  • 2 handfuls fresh herbs

  • 2 handfuls cheddar or crumbly cheese

  • 4 tbs chickpea flour

  • 1 tsp heaped Dijon mustard

  • Salt and Pepper

 

  1. Fry the chopped mushrooms in the oil until softened and liquid evaporated

  2. Whisk in everything else, flour last

  3. Add to a lined baking dish, 20cm squared

  4. Bake 25 at 180 C fan
